‘But it’s delicious’ I told her. ‘It’s a beautiful fusion of British and Italian cuisine,’ I went on. ‘It’s based on an ancient Italian recipe’.
Finally her reply came, ‘But Daddy, Marmite on spaghetti sounds disgusting!’
I did eventually persuade Rosie to try this brilliant simple dish which comes from Anna del Conte via Nigella Lawson. And she loved it, so did Sorrel, the little one. It’s now a firm favourite on the ‘nothing in the fridge’ recipe list.
Our north American friends can find Marmite (or Vegemite) at World Market, Amazon and in some Safeways.
Serves 4 kids
Nudo Spaghetti – 350g
Unsalted butter – 50 g
Marmite – 1 tsp
Parmesan cheese – freshly grated, for serving
Cook the spaghetti in a pot of boiling, salted water. While the pasta is cooking, melt the butter in a small saucepan and add the Marmite and 1 tablespoon of the pasta water. Mix it through and then pour over the drained spaghetti. Serve with a generous sprinkling of grated parmesan cheese.
